I was searching for a hotel booking app and came across this app, which I think has some nice features. But I notice it is using PHP 7.4 which has no support. Are you guys planning to update this app?

The current QloApps version is compatible till PHP 7.4. In our next major release, we will start support with PHP 8.x.
However, currently we cannot commit to the release date of our next major version.

I am going to install PHP 7.4 and see the full extent of this software. Based on the download I see that this is a standalone app, but can it work like WordPress and OpenCart where you can purchase a theme and configure it to suit your needs?

Yes, the QloApps is an independent platform like WordPress and OpenCart.
